This dish is popular as Chilli chicken Gravy and Chilli Chicken dry with the same ingredients. There are many recipes of Chilli Chicken you will come across with either a time taking- tough recipe or using some extra ingredients which doesn’t necessarily available in market.

Hearing the name itself can make Non – veg lovers feel appetite. This dish has boneless medium pieces of chicken on rolled with cornflour, fried, tossed with sauces, few vegetables and ready to serve with Rice or chapatis. Some people prefer bone – in chicken also.

7 Tips for preparing Chilli Chicken

Choice of chicken – Chicken pieces must be boneless (or bone-in as per preference) and medium sized so that it can be cooked and eaten easily. We can easily get these boneless pieces from breast or thighs of chicken.

Marinate – Boneless chicken should be mixed with the spices, sauces, cornflour for full coverage on its surface and to be let for 1-2 hours for marinating either under normal conditions or in refrigerator.

Gas flame – Gas Flame should be kept at medium to high flame but mostly medium while frying so that boneless chicken pieces gets to fry and cooked inside out.

Gravy – Cornflour to be mixed with minor amount of water, then it should be added to increase the thickness of the gravy but not directly. This will help in making the gravy more smooth.

Ajinomoto – Ajinomoto enhances the flavor of dish but should be avoided as it is not good for health.

Food Color – People often use food color to give deep red color, but avoid that and stick to the best Chilli powder or frying it as required.

Egg – You can add Egg during marination, for juicy crunch texture , but its is completely optional.

How to make best Chilli Chicken at home? We will answer your question.

Preparation Time : 60 -70 Minutes

Ingredients :

  • 350 Gms Boneless Chicken (diced) (Bone – in as required)
  • 1 Egg (slightly beaten) (Optional)
  • 2 tbsp Cornflour
  • All purpose Flour (Maida)
  • 1/2 tsp Garlic Paste (Optional)
  • 1/2 tbsp chopped Ginger
  • 1/2 tbsp chopped Garlic
  • 1 tbsp Salt
  • 100 ml Oil (for deep frying)
  • 4-5 Curry leaves
  • 1-2 Bay leaves (Optional)
  • 2-3 Cloves and Black Pepper
  • 2 -3 Onions, flower shaped sliced
  • 1 Cup of Sliced Capsicum.
  • 2 tbsp Green Chilies, sliced
  • 2 tbsp Soy Sauce (adjust according to strength)
  • 2 tbsp Red Chilli Sauce or Schezwan sauce
  • 2 tbsp Vinegar (Optional)
  • 1 Green Chilli for garnishing
  • Chopped Coriander Leaves.

Instructions :

  1. For Marination
  • At first clean the Boneless chicken pieces with water and remove all the excess water.
  • For marinating these chicken pieces ; In a bowl add Maida (All purpose flour),Cornflour, Black Pepper, Red chilly Powder, salt and mix well.
  • Now add Boneless chicken pieces in this bowl and mix them gently,
  • Also add 2 Table spoon Red chilly sauce, 2 Table spoon soya sauce. If red chilly sauce is not available add Schezwan sauce instead. Adding vinegar is optional.
  • Now mix all for proper marination coverage over chicken inside out and set aside for 1-2 hours.

2. For Frying

  • Take a frying pan heat it and add 6-7 tbsp oil to it for shallow fry and 100-200 ml for deep fry in medium flame.
  • Spread oil evenly on the pan.
  • Now add marinated chicken to the pan at medium to high flame.
  • Flip chicken pieces after 3-4 minutes so that it gets full cooked and crunchy.
  • Flip and cook until it gets light brown and then soak the excess oil from chicken using tissue.

3. How to make Chilli Chicken Dry?

  • Take a pan heat it and add 4-5 tbsp oil into it and spread it evenly on medium flame.
  • Next add 1tbsp chopped ginger,1 tbsp chopped garlic and curry leaves to the pan.
  • You can add herbs like Clove, curry leave, Bay leaves, black pepper as per your taste. Purely optional.
  • Saute in medium to low flame until raw smell of Ginger garlic and other herbs aroma can be smelled.
  • Now add flower shaped cut and separated layer of 2-3 onions. Wait until it turns light brown and little hardness should be there for crunch.
  • Then add chopped red Chilies and mix again.
  • Add 1 cup of capsicums which are chopped straight in some angle and mix all again.
  • If you have Chicken Chilli masala, can be added at this moment in the same frying pan. Otherwise add own masalas as half tbsp Dhaniya Powder (Coriander Powder), Black Pepper Powder (Kali Mirch) Haldi Powder (Turmeric Powder) etc. Mix all herbs and spices then mix well for 4-5 Minute.
  • Then add 2 tbsp of Soya Sauce, Red Chilli sauce /Schezwan Sauce each , to the frying pan.
  • Now add salt and sugar for balancing the taste.
  • Then make a cook stir of everything and shimmer the sauce for another 2-3 minutes on medium to low flame.
  • Finally add fry chicken to this gravy .
  • Now cook everything to medium to high flame for 2-3 minutes, until all the fry chicken get mixed with the gravy.
  • Garnish chilly chicken with spring onions and chopped coriander leaves to serve hot with Roti or Chapati.

4. How to make Chilli Chicken Gravy ?

  • Follow the exact same recipe, simply increase the quantity of water, cornflour, sauces.
  • Increase Sauces by 2 tbsp, water by 200 ml. Also Add extra1 tbsp cornflour with water, to increase the consistency of gravy.
  • To balance the taste sprinkle a pinch of salt and sugar for Indo Chinese Chilli Chicken Gravy.
  • Stir the chicken Chilly with sauces and keep the dish aside.

5. Serve Chilli Chicken Dry or Chilli Chicken gravy hot with fried rice, flavored rice, noodles, chapatis.
